Finally I got my Excelsior unofficial eval! But it only shows what I still need, ex. 21 UL Arts/Sciences Credits. It does not show what credits were applied to what areas. Is this the experience others have had? I was hoping to see which credits applied to which subjects before I enroll.

I had the same experience, your official evaluation will have all that information, you'll get it within approximately 6 weeks of enrolling.

I just got my official eval on 24 June and you are correct. It tells you exactly what you need to finish your degree.
