I imagine the only real options would be to either take pictures of the screen using a digital camera or use some type of audio recording device to record the questions and answers as you read them aloud.
You might also consider simply writing down the most difficult questions.

As far as I know, there is no way to block copy and paste and print screen functions except to use Java. You can easily prevent Java/Javascript from running by changing your browser security settings...
