Has anyone heard of these people?
Online Correspondence School - US Career Institute - Distance Learning - Study at home, self paced - Medical, legal, & business courses I mentioned being interested in vet tech....a friend of mine got a vet tech certificate through these folks and I was curious if anybody knew how this organization is viewed in the academic world. Would training through an organization like this have any real credibility in the "real world"? It is accredited by DETC, which means absolutely nothing to me. Can someone 'splain?

If it is accredited (I think DETC has a search function on their website) then you should be fine. If you don't know the issues surrounding various levels or type of accreditation you should do a little research. There are several (RA, NA, DETC, etc etc). My opinion, at the end of the day it doesn't really matter so long as the program fulfills your goals and meets your needs.
I'm not sure US Career Institute is viewed in any way in the "academic" world. Looks to be more of a...well... career institute. These can be great for what they are, but don't expect a certificate from here to carry you up the university world ladder.
