Even people who graduate from yet more expensive in-person cooking schools don't automatically become head chef somewhere. You have to work your way up.

Very true. I was accepted into the Culinary Institute of America many years ago. Even with a bachelor's degree from there I would have only been able to find jobs at the bottom of the totem pole. I was like tuition's $45K a year and I won't even make $45K a year when I graduate? FORGET IT!

I know of a few people who graduated from well-regarded culinary institutes, and they're either prep cooks or have given up on their dreams of becoming a chef. It's kind of like going to beauty or barber school, except these fields are licensed. There's a lot of competition, and sometimes becoming successful involves being in the right place at the right time.
