Ideas, I wouldn't waste too much time focusing on previous or outdated achievements. I would focus on current and future educational/professional goals you have and work on those, then add it to the resume/cv after you finish each one.

For health experience, you can become a Certified Pharmacy Technician (CPhT) with a high school diploma, $129 and one exam (PTCB certification exam.) You then have a certificate and can use the letters after your name.
I don't recommend this as a career (I made under $10/hr with the certification + state registration) but it's a relatively easy way to get a health-related certification.
