Now lets show some greed....while doing self-evaluations in the TESU site, we noticed that if she takes COM-209 Public Speaking she can also get a BALS-in Humanities. Is this even worth going for it? She will get a BALS-Social Science already and an AA in business administration? your thoughts.....

Personally, I don't think a double-BALS is worth it. A BALS is more of a check-the-box degree. It's fine for that purpose but it's not especially useful in and of itself in the same way that specific majors can be. For the most part, it's not going to matter if you have a concentration in Humanities vs. Social Science vs. anything else.
In progress:
TESU - BA Computer Science; BSBA CIS; ASNSM Math & CS; ASBA
Completed:
Pierpont - AAS BOG
Sophia (so many), The Institutes (old), Study.com (5 courses)
ASU: Human Origins, Astronomy, Intro Health & Wellness, Western Civilization, Computer Appls & Info Technology, Intro Programming
Strayer: CIS175, CIS111, WRK100, MAT210

A few things, 1) BALS with a concentration is different than a BA Humanities and a BA Social Science, TESU got rid of those majors a few years ago. 2) Your missing COM-209 course was moved from the required general education to your Area of Study, that course is already part of your degree plan, it just got moved there as it took up the remaining requirement for the AOS. Basically, if you review your BALS SS, it's already there. 3) If you're looking at a second degree, I would recommend something different, such as a BSBA instead. 4) Going for a Masters might be a better idea instead of focusing on the second bachelors.
