Exactly. I had to take Calc 2 at a Finnish uni to get more advanced math into my CS degree.
Therefore, I'd go even further:
In terms of Math: Calc 2, 3, 4, Linear Algebra, Discrete Math, Logic, Numerical Analysis, and any other upper-level math course that is more advanced
In terms of CS: Data Structures and Algos 1 and 2, Computer Architecture, Operating Systems, Computer Compiler, Theoretical CS, Operations Research, or any other upper-evel CS course that is not some standard programming course.

In terms of languages and after Spanish 1 and 2 (Sophia simply had to offer those two at the beginning, because most of the people want that), I'd add Chinese 1 or Japanese 1, some other non-Indo-European language to add something new to the mix.

I'm sticking with "Calculus I" or "Intro to Relational Databases" as the "current hardest" ... (I'm biased, I dislike math) BUT "these" have the "most touchstones": (that I have seen)
  • Introduction to Psychology
  • Operations Management
  • Business Communication
  • Workplace Writing II

Other than languages...
If your an English speaker... French I is "near" class "B" (la/le, reverse tense/structure, etc), but Spanish I should be a "cake walk" with "the will do do it" (Spanish II might be alot harder???)
I ONLY speak English and I find French difficult (always have)

If I were you, I wouldn't hesitate to take any of them. According to the posts on this forum, they didn't seem too hard - they are designed for beginners.
The whole purpose of those courses is to make you get into the "flow" of learning them. Sure, if you knew some of the languages before, I'm pretty sure you'd fly through them, but you definitely don't have to be proficient to pass 'em.

Sophia Business Data Analytics is now available here.

15 Challenge quizzes, 6 Milestone unit tests, 2 Touchstone assignments, no final Milestone. Both Touchstones involve analyzing an Excel workbook of business data. Given several issues to address, you will present that analysis in a slideshow with speaker notes.

Touchstone 2: Carl’s Cookies (100 points): Students will analyze sales, marketing, financial trends,
customer behavior, and inventory management for a boutique bakery. Using Excel-based analysis and
visualizations, students will assess product performance, evaluate marketing effectiveness, forecast
financial trends, examine customer spending habits, and determine the impact of discounts on satisfaction.
The final deliverable is a PowerPoint presentation with speaker notes, providing actionable insights and
strategic recommendations to help Carl optimize operations, increase profitability, and improve decision-

Touchstone 6: TechGear Inc. (100 points): Students will analyze historical sales data for TechGear Inc. using

Finally, a course that is upper-level. It was about time that Sophia also provides UL courses. Additionally, the syllabus looks quite interesting. I like that they also talk about Linear Programming (this a Math method, not actual programming), Linear Regression, and let's see what the Machine Learning section looks like. I hope they continue to offer more upper-level courses in the near future.

I'll check out the course right away. Let's find out what it will transfer in at TESU.

if you can do this in one day and you have no experience then it should not be upper level            
I'd say if shouldn't even be ACE evaluated
