For the 18 AoS-GM, I COULD do just 1 Management course, 1 Marketing, and 4 Finance if I wanted, correct? Provided 4 of the classes are UL?

Yes, that should be the case... you can have a mix and match as long as there's 3 of those 4 (ACC, FIN, MAN, MAR)
