The cornerstone will give you the TESU GPA, but testing out completely of the English and AOS will NOT give you a GPA. I'm wondering if you will have to take the UExcel English Comp ($500) or take a course at your local CC to get that? Same with the AOS - you will have to take at least 1 course somewhere that gives a grade (UExcel or CC).
SL gives grades as well, and you can have the SL transcript sent directly to TESU -- you do not have to go through ACE (and have the grade wiped out).
That said, right now, my assessment does not say anything about GPAs for AoS or English, only overall and TESU, the first is "met" since the requirement is 0.00, while the second is not, but should be when this PLA course finishes in just over a week. I was only officially enrolled about a week ago. Really I just think those two things (English and AoS) don't literally mean what they say, and just mean C or better as the academic eval says, which means pass or better from ACE, CLEP, whatever.
I'll contact them and ask though, can't hurt.

Before there weren't anything listed at the bottom for the undergrad and graduate levels, now it requires a 2.0 and 3.0 GPA.
Actually, I just found this in the previous catalog as well, so this is also nothing new... mentions AOS and English.

I know the wording of the GPA part didn't change, but when added to the wording the OP was talking about, it does change things:
Undergraduate students must have an overall TESU GPA, an English Composition GPA and an area of study/option GPA of 2.0 or higher.
Also, just because the CLEP counts as an equivalency doesn't mean that you get a grade for it to satisfy the GPA requirement. For instance, I took English Comp I at a community college and got a grade for it. If I then took the English Comp CLEP to get my English Comp II credits, I would be fine, because I got a letter grade for my first course. For someone taking the CLEP only though, I don't see how the English Comp GPA could possibly be met.
I'm not saying that you can't test out of everything, I'm just wondering how TESU is going to apply this requirement to people who don't have a grade for any of their courses.

The policy the OP talked about didn't change either though, the older July 2015 catalog described the same policy for overall TESU, English, and AoS GPA of "C"
