Considering we don't know you and you don't know us and the biases we all bring, do you think that you might do better by using the search feature and researching each of the above exams?
There is a generic answer to the kind of question you have posted. What interests you? What do you already have prior knowledge of? Yes, those were questions. But the answers to those questions are the answers to your question. The more you already know about something, the easier it is. If you know little or nothing about those topics, the easiest one is the one that interests you most. It won't seem like such a chore to study for something you find interesting.
You can find exam difficulty ratings are
Free Clep Prep.com. Think of those difficulty ratings as relative, not absolute indicators, keeping in mind that they don't factor in your interest in the topic.
If you still can't make up your mind, think about which exam is most useful in preparing you for a future career - which could even be your second or third career. Human Growth and Development is required for nursing school and is good for future school teachers. Criminal Justice is good for those pursuing a career in law enforcement. Drug and Alcohol Abuse is good for those who want to be a social worker or professional counselor. Future nurses and school teachers could also benefit from knowing that material.
