I think the DS programs are new and may begin to catch on more in the next couple of years. Tough call. I'm in a similar situation with CompSci and CyberSec. What pushed me to CompSci was the requirements for some of the grad programs I am looking into.

I think that for all three of those master's program, the CS bachelor's is probably the way to go. There's plenty of room in the CS degree for electives, so go ahead and do the math courses, then when you get close to the end, you can decide whether you are really motivated to do whatever extra courses are needed to get the math degree, too. Even if you don't get the math degree, the extra math will help you both in the graduate admissions process and professionally.
