Ok, if this transcript I found online from excelsior is correct, They only list "Bachelor of Science" and the program "General Business" in this case.
It is listed this way...
Degree : Bachelor of Science
Program : General Business

So does anyone know how a liberal arts degree is listed with a major in Biology?

I would have to second that.
Because its a BA in Biology that just happens to be from the Excelsior "School of Liberal Arts", the same would apply for BS in Biology, no mention of liberal arts school.

I believe both of mine also say, (but I don't have them readily available):
Area of Study: or Concentration:
For example my AAS says:
Degree: Associate in Applied Science
Program: Technical Studies
Concentration: Computer Technology or
Area of Study: Computer Technology
and for my BSLS it says:
Degree: Bachelor of Science
Prorgram: Liberal Studies or Arts (can't remember)
Area of Study: Administrative Management
Concentration: Administrative Management
Most of my credit for the Bachelors was in Management/Business.
But there was no way I was going to take the Finance, Economics, and other business courses that I needed for a Business degree. Admin Management sounds good to me.
