Ok, so this is random and REALLY off topic, but I never bake. However, when I do... I make the most AMAZING cakes ever! I just thought of this one for my mother-in-law's birthday and everyone said it was the best cake they'd ever had. I could tell that it was true when there was none left over and people were scraping the kid's plates! We have a big crowd to feed and they usually love all cakes, but I've never seen a reaction like this to any cake ever!

Anyhow the idea I had was to combine a 3 leches cake with a mounds candy bar. It's a super-moist 3 leches cake filled with amazing coconutty goodness and tons of rich, dark chocolate.

Step one: Baked 2 round white cakes, except instead of using vegetable oil, I melted coconut oil to give a slight coconut flavor
Step two: (This is the "3 leches" part) Mixed half a can of sweetened condensed milk with half a can of coconut milk. Poked one of the cakes with a fork and poured the mixture in. Soaked in fridge overnight
Step three: The next day, I created the filling, which was a bag of mounds candy bars chopped and mixed with dark chocolate frosting and mixed with a few tablespoons of melted coconut oil
Step four: Put the filling on top of the soaked cake, then put the other round cake on top
Step five: Frosted the entire cake with dark chocolate frosting, sprinkled with coconut, and garnished with mounds candy pieces.

Make sure to keep this one refrigerated due to the milk.. and yes, I know that this is technically only a 2 leches cake. Wink

For anyone who likes chocolate & coconut, it will be the best cake of your life... just don't leave out the leches.. that is what makes the cake so moist!


P.S. I learned how to bake in Mexico, so the only type of cake I will ever make is some version of 3 leches lol

LOL.. you only say this because you haven't seen my house. Thank goodness I have kids to do dishes and help out! Usually they make the mess worse, but now I need their help to keep things clean while hubby and I pack!!

LOL... I love the most interesting man in the world.

@Hicandle - thanks for asking. DH and I are flying out to Chicago this weekend to meet with our real estate agent. My new job starts on March 5, so I'm really hoping it doesn't take too long to find something. There is a strong possibility that I may have to go out first while my DH and kids stay in Denver if we don't find something this weekend. And I definitely don't have enough $$ to fly back and forth a lot.. thank goodness I do have frequent flier miles.

You know... the canned coconut milk when left in the fridge over night will separate.
I use the thick part to make dairy free whipped cream or icecream.
I wonder how that might work as part of the frosting on a cake like this.
Or maybe as icecream turning this into an icecream cake.
I foresee an experiment in my near future. Wink

hmmmmm.... you could whip the coconut cream into the frosting and would be delicious!!!! When I do the leche mixture, I put the sweetened condensed milk and some of the coconut water + solids into a bowl and whisk them to mix. Beating them might be even easier.

And the good part is that coconut is the new health food, so that means this cake is health food!!! Smile :p

I am laughing. Where I live they call the most amazing things salad: Mix up snickers bars (sliced) with diced apples,cool whip and the contents of a vanilla pudding box and voila: Salad! Sometimes they stir in a can of mandarin oranges!

I will have to keep Carnation's idea in mind considering that it is relevant to me at this moment. Well that cake and salad sounds good too, but I have to pass on both for ultimate mind power.
