Does TESU have a database where you can look up what you'll get for credits on a JST or CCAF transcript? And if so, can anyone access it, or do you have to be an enrolled military student there?

I think you have to sign up for their "MVP" military and veteran portal account to see a generic roadmap based on your job/specialty/rating in the military.

None of it is set in stone, though since people go through training at different times and evaluations of military training programs change over the years as well.

I was thinking more along the lines of actual credit on a CCAF transcript, rather than jobs they had.

The training for the MOS, rating, or specialty usually results in credits on a transcript. I'm not too familiar with the CCAF transcript, but the ACE-recommended credits will be on the JST for the other branches.
ACE has a guide for military training.

CCAF is different than the JST, it's an actual CC rather than ACE credits.
Then, you're probably going to have to look at the PLA database. Anything that's been evaluated should be there.
I understand that CCAF is a CC, but I figured that there would be credits listed for technical school training for the AFSC.

There's the Air University Associate to Baccalaureate Cooperative (AU-ABC) Program on the Air Force Virtual Education Center (AFVEC) website (DoD access only). You can search for what credits will transfer from your CCAF to numerous other colleges/universities. It's actually one of the reasons I choose TESU to begin with.
If you can give me the AFSC (2A3X3 perhaps) associated with that Course (AMT1104)/CCAF, I can see if TESU has a transfer program for it.
