Do you mean Statistics? ASU has a stats course: https://ea.asu.edu/courses/elements-of-statistics-stp-226/ Sorry it's not self-paced. Some of their other math options are though.
The *General Education related* section or the *General "Big 3", B&M colleges, and other colleges section* Might be a better place to post this question--lots of people who know about college courses look at those sections but might not look here.

You will be hard pressed to find engineering classes like statics or dynamics in that format.
Some california community colleges offer asynchronous classes for physics and statics (maybe even dynamics). Dynamics builds off of statics, which builds off of physics 1, so you really need to ensure a good foundation if you are to learn them.

BYU offers self-paced Physics 1 & 2 for only $717 each

The catch is they are not calculus-based i.e. not Engineering Physics 1 & 2. But since you just need to check the box I wouldn't worry about it too much.
15 years aga BYU did offer Engineering Statics, Dynamics, and Mechanics of Materials self-paced. They no longer offer them. Maybe the professor who wrote the lessons and exams retired and no one wants to pickup, or more likely lack of demand. I did take the Mechanics of Materials course back then and it's a lot of problems solving but got an A after about 5 months.

Sorry everyone I wrote Statics and Dynamics but meant "Signals & Systems" which is an EE-type course.
