I am planning to have our son do this Microbachelor piecemeal over the course of 3 years for about $160 in total. Even if it doesn't get accepted as the AAS Capstone, it will still be a good certificate to have under his belt for his resume.
Someone should try this out, the EdX cornerstone equivalent can be used for the AAS Applied Computer Studies, and if a student wants to add another Area Of Studies afterwards, they should be able to without the need of the Cornerstone and Associates Capstone. I don't think the EdX capstone requirement is specific to one degree. For example, the AAS Environmental, Safety, and Security Technologies can be added without issues as a second AOS to the AAS Applied Computer Studies degree.
