I need a graduate level Nutrition course for current program.

I need a graduate level Nutrition course (as a prerequisite) for current, in progress, PhD program. 

I would like one 100% online, any advice?

You can try taking one course at ASU, which offers a master's in nutrition program, or at Liberty University. Does it have to be a doctoral-level course, or can it be a master 's-level course?

Only a graduate level NUTRITION course is required as a prereq. 

I am with Liberty, and missed my opportunity to take it with them. I can still take it there but was seeking a transfer to avoid the in-house politic. They slow the process down by taking it out of the PhD area. My intent is to finish as soon as possible but LUO insists upon slowing everything down.

I would like to begin the dissertation process in the Summer 26. (yet this will slow it down considerably).

Most graduate classes will require at least one semester of studies, even if it's an online course. I would search for an institution that offers certificates, diplomas, degrees at the graduate level and take one class from them that transfers, you don't have to finish the credential if you don't need to. Thank you for the input, 
I am looking at AMU (American Military University), as they do not require application to a certificate or degree program. 

They are accredited so the transfer credit will suffice. 
Other than the price tag and non CBE style, I believe the format is similar to UMPI on Canvas 8 week term (papers and projects). 

Anyone that has current experience with their format please reply, either here or private message.

Hopefully this will help any onlookers that may run into a similar situation...
