I was poking around Excelsior's catalog and I found ENG315 Zombies in Literature and Popular Culture. https://www.excelsior.edu/course/ENG315/ I thought it looked interesting and possibly fun for an upper-level course.

I love that it's a relevant and required class for physics students.
I think I used to have the book with the same title, once upon a time.

My vote would be for CM 424 — Fragrance Knowledge at the Fashion Institute of Technology in NYC. Upper level course about how to smell things....just not the things referenced in the last post.

I took Philosophy with Super Heros and it counted as both a creative writing credit for the masters in creative writing and literature degree and as a philosophy credit for the certificate in ethics and philosophy at Harvard Extension. If taken as an undergraduate, it had a 3rd requirement it could be counted toward, but I don't recall what that was since it didn't apply to my situation
