It also depends on what you're good at.
And, the most important thing besides number of quizzes - if a course has a pretest/placement test. Many do. I took 3 placement tests for Human Growth & Development and got through more than 50% of the course in an hour or so. Oh yeah, and if you've already taken a course, many related courses will have some % completed.

Psychology-101 Intro to Psych. has 108 quizzes. Psychology-104 Social Psychology has 91. But both these courses felt very simple and easy to learn.
Social Science-108 has 85. Just started with it. Managed to complete more than 50% in a day.

Courses covering subjects you know the most about will be quickest. This also applies when you're taking related courses since there is often significant overlap.

Library Science: Information Literacy is the shortest course Study.com offers. it's only about 40 quizzes and you already know the answers to at least 25 of them without reading the material
