Basically, I would Stop, Drop, and Roll. Stop for a moment, Drop what you're doing, Roll along with the following... Review what I mentioned, UMPI will look at your credits as the 'major' and electives, that's it, you're missing the general education classes. You just need to finish the general education and you're done, do the gen eds at UMPI for residency purposes, 30 credits and away you go.... I would actually skip all that as I mentioned earlier, you have a BBA, skip it, go for my recommendation of doing the Masters or MBA.
It's great that you're wanting to do the Bachelors, ENEB for the learning and filling knowledge gaps, plus getting the MAOL or MBA. That's exactly how I am doing mine, however, it's not for everyone. Most people should go in a linear fashion and go from the BBA > MBA or MAOL, whatever other Masters you have in mind. The only reason I did ENEB was to get my learning gaps filled and add anything to my present knowledge of the subject matter. I didn't do it for transfer credit or to have it evaluated, etc, just for the extra knowledge...

I just want another bachelors since mine was only evaluated as three years of undergrad. study by WES, furthermore I want to get the financial aid as I think I will qualify for the Pell Grant and I want to POTENTIALLY maximize it if it will give me left over $ which I can use to fund the MAOL. I just finished the GEC at Sophia with the exception ENG II, but I’m still confused as to how my credits from the WES evaluation would transfer to UMPI ?. I want to do the BBA program in Management and Leadership and or Project Management if I can somehow fit both concentrations in, while also completing as many of the credits as possible for the MAOL and maximizing the Pell Grant in a way that will give me left over $ simultaneously, if that makes sense.

All you have to do is apply to UMPI to get all your credits put into the degree evaluation, you'll get an academic review which places the classes in the respective areas. You just need to review the highlighted areas, which tell you the remaining components of the degree. Use those for your residency credits and throw in the 3-4 classes that can go towards the MAOL, try to finish all the requirements in two session to max the Pell. If you want, take longer, to get more classes for GPA purposes and residency, and because it's an ego booster and freebie, add the AALS and forget it as the degree will be complete once you finish the bachelors.

I had a bit of trouble understanding. You said UMPI will look at my credits as the major and electives and that I'm missing the GEC. I have the credits listed as evaluated by WES and also most of the GEC done at Sophia except ENG.

It doesn't matter if you have all the classes completed and transferred into UMPI, you can have 500 credits, you still need to see what you have remaining, it can be all non-business classes. Do whatever classes that interest you and can go towards the degree.
Basically, It's really up to you to decide what class to take, if it's part of the major or not, it can be all English or History classes for that matter, apply, get it evaluated, and talk to your advisor, not me as I don't work for the school and not your advisor...
