I put the day I submitted my last assignment. Worked for me. I waited until after getting my confirmation emails, though.

So far study.com has shown the date I took the exam as the date I finished the course regardless of when the papers were graded. So that is the date I use.
Working on: Debating whether I want to pursue a doctoral program or maybe another master's degree in 2022-23

I went by the date of completing my tests. Still awaiting results though. But one can be sure of passing based on the number of questions you have answered correctly, which shows up at the end. I am excited to say I have completed 3 LL psychology courses in the last 20 days!
By the way, I got a reply from study.com about submitting my written assignments after temporarily pausing my membership. Seems it is ok to do so. As long as the courses were completed during a membership period, the written assignments could be turned in any time. Just that the course won’t be graded until everything has been submitted.
