BAS with Minor in Management at UMPI sounds like the best degree for you. Or just skip the AAS and do the BLS with the same minor. The MIS minor could be good option too, depends what you do for work...

This is what I would recommend as well, a Pierpont BOG AAS and UMPI BAS MIS minor.  If you want to add a secondary minor to the UMPI BAS, you can.  I suggest you also continue working on any certs you are interested in, not just the W3 PHP, but the ones offered on Coursera, the Google/IBM ones that have ACE credit recommendations.

I agree with UMPI for you. It would be the cheapest and, if you qualify for financial aid, could potentially be free (or close to it). You would need a foreign language (Spanish through InstantCert is easiest, if you don't know any foreign language) and a science with a lab. If you do choose UMPI, I think you might need another month at Sophia to make sure that you have your GEC met.

Since the Pierpont degree is FREE, I would go ahead and get that while you work on whatever else you need for UMPI. You might be interested in one FREE Coursera certificate https://degreeforum.miraheze.org/wiki/Coursera through https://theamericandreamacademy.org/ to get an Area of Emphasis in Information Systems. Or I think you have enough credit to get an AoE in Mathematics? The BOG AAS isn't worth a ton on its own, but I think that having an AoE in Math could help your career prospects. I would recommend doing College Math and/or Statistics at Sophia to make sure you have enough math for that AoE.

UMPI and Purdue Global are going to be a bit more difficult with the on-again, off-again schedule you have, so I'd consider EC instead. The BLS is a good option if you just need ANY degree.

It will cost you ~ $4,000 at EC for 7cr, and you can do the rest of the degree with alt-credits (no need for RA credits like TESU requires). Not sure how financial aid works there, so I can't help with that side of things.

Whatever you end up doing, you will need to figure out a plan where you complete the cornerstone/capstone (TESU and EC) or 30cr (UMPI and PUG), so you need to think about that up front.

I'm not sure that EC would be a good choice, considering the stricter deadlines of the required 7 credits. It might take a little longer (and cost a little more) to get through UMPI, but one shouldn't have to worry about flunking out because of not meeting a weekly deadline. There is only the end-of-session deadline to consider.

I'm thinking that it's quite the opposite - you only have to meet deadlines for a short time if you do EC, whereas at UMPI, you're going to have end-of-term deadlines every 8 weeks, and if you don't meet them, you can still flunk the course.  AND, you'll have to go back and do another term, and do this over and over until you finish.

UMPI does not insulate you from failing a course.
