I just enrolled in TESC. I'm wondering if there is a place to go to talk to current students if I have questions or if this is the place?

I found some example course information online. Can someone tell me.....do the teachers commonly follow those written assignments/online discussions that are online or do they usually have their own curriculum?

Unlike traditional colleges, TESC uses mentors- not professors/instructors. That means, that the curriculum was NOT written by your teacher-it was written by TESC and your teacher will not be making changes unless they are very minor. Your mentor will post discussion questions which may change from term to term- will interact with you in the forum, and grade your work, but the mentors do not have any authority in the traditional sense.
(so the short answer is yes- what you see is what you will get unless there are changes to the course, updated text books, etc)
