What upper level courses are offered at Study.com that you would recommend for someone needing to complete two upper level courses in the next 3-4 weeks.
This will be going to Texas A&M Commerce.

What school is this going to? Some schools bounce courses with upper level ACE recommendations down to lower level, or maybe occasionally in the other direction.
Principles of Philosophy has a unique ACE recommendation for 6 semester hours (2 regular courses) upper level, but IIRC for example it comes in lower at TESU and UMPI. It doesn't have an assignment. The 6 semester hours was a relatively recent reassessment from ACE, so it's possible your school had it down as 3 but would now reassess it as 6.
Health Services Policy's recommendation is upper level and it doesn't have a final exam.
Foundations of Leadership and Leadership & Organizational Behavior are separate courses each with an upper level recommendation. Managerial Communication and Organizational Communication are separate courses each with an upper level recommendation.

That's a bit tricky. Study.com doesn't maintain
a page listing transferable credit for that school; it's not listed under any form of Texas A&M Commerce, TAMUC, ETAMU, or East Texas A&M. I don't know that TAMUC/ETAMU publishes its own handy list of how it takes Study.com courses like the WGU and SNHU pages bluebooger lists, or UMPI's mostly reliable MaineStreet transfer tool. At most schools course transfer information this specific isn't public.
She should propose something based on
the ACE recommendations and ask her TAMUC/ETAMU advisor.
