No, they would not take it after the expiration date.  They check to make sure before they bring in ACE stuff.

If a course is renewed by ACE, it's continued on.  So it will just have a changed expiration date, as if it never was going to expire on the date it's at now.  If you look at some courses, they will show that they've been approved by ACE for a long time (some are more than 10 years old).  For example, look at Straighterline's American Government course.  It shows that it's been approved from 10/1/2012 - 3/31/2018.  In that time, there has been at least 1 re-approval (they normally last 3 years).  If they don't change the course, and just get it reapproved, then when you check after the reapproval date, you will see 10/1/2012 - 3/31/2021.  There will be no lapse in date.

For courses where there's some sort of change to the content, you will see multiple dates.  For example, look at their Accounting I course.  It shows 10/1/2012 - 3/31/2018.  But there's a drop-down menu, and it shows 5/1/2008 - 9/30/2012.  So for those dates, the course content was different, and it tells you the info in the summary.  But there is no lapse in date.

I would just contact SL directly, they will normally tell you what's going on with a course, and whether they're in the process of approval at ACE.  If you don't feel comfortable with the process, you either need to take and finish a course before expiration, or don't take it until/unless it gets renewed.
