Once you've filled in the required courses, you should be able to pick any type of math courses you want in the electives section, even mostly stats courses. The sticking points will be:
1. Finding enough LL and UL stats courses cheaply.
2. Having TESU transfer them in using different equivalencies.
I could easily see TESU being lazy and lumping a bunch of different courses under the same equivalency. You'll have to run your choices by TESU before taking them and might have to challenge some if they claim courses overlap. At least with statistics.com, they are partners and should have equivalencies worked out.
