I see mentor/prof positions pop up for them pretty often -- once I'm no longer on the Georgia Tech payroll I might give it a shot. All the ones I've seen are volunteer positions (with a tiny honorarium), but it's a good CV builder (and, like in collegecareerstudent's case, an opportunity to give back).
