I have to agree with @Jonathon Whatley. Unless someone comes here and tells us that their TESU Capstone course required original research, and new knowledge (something that typically comes with graduate levels of education), I don't believe it requires such effort. I would think you could also use a soft CS topic like UI Design and have it accepted.
