Adams State College has a few UL distance learning options that I was looking at. They will allow you to enroll as a non-degree seeker and also have both correspondence (paper) and online self-paced courses.
Colorado Distance Learning - Extended Studies - Adams State College
I haven't taken any classes there, but it does seem like a good alternative. COSC did confirm that the class I was looking at there (300-level sales management would indeed be recognized as UL) For what it's worth, I'm in Colorado and had heard of Adams State prior to learning about their distance options. It's definitely more well-known as a small B&M college, and not for online classes.
