I doubt you're going to get around that much with the English degree. Here's the relevant part of my evaluation:
Area of Study (18SH must be at the 300/400 level)
Semester Hours Completed: 21.00
GPA Achieved/Needed: 4.000 / 2.000
Complete all 4 subrequirements:
A: Survey of Literature (Completed)
> Complete 6 credits of Survey of Literature.
Semester Hours Completed: 6.00

C: Non Western Lit (Not Started)

> non-American).

D: English Electives (In Progress)

> Writing courses as electives. At least 15SH must be at the
> 300/400 level to satisfy the requirement of 18SH of 300/400

> Arts Capstone) can satisfy 3SH of this requirement.

However, there is no 30 credit upper level requirement, the req is 18cr hrs at 300/400 level. I think you will have to take all the higher-level English/Lit courses TESC offers, which will be:
One Writer's Vision: Jane Austen (ENG-393)
Advanced American Literature I (LIT-301)
Advanced American Literature II (LIT-302)
African Encounters (LIT-331)
Non-Western Literature (LIT-460)
Liberal Arts Capstone (LIB-495)
Or, if you haven't paid the comprehensive tuition, you can take classes from BYU, they have a great selection of lit and english courses (the prereqs don't apply to independent study students!) University Online Course Catalog - BYU Independent Study
