Do these all happen to transfer in as education/teaching-centric credits?

No. Some do and some don't. I transferred in about a dozen economics graduate credits - with the ECON prefix - to TESU that were aimed at high school economics teachers and they all came in as upper level economics credits, not education credits. So I would think that if the prefixes are not edu, these would be like any other upper level credit in a subject area.
