There is no stipulation as to how many paragraphs you must write. In the official study guide there is an example essay with 2 very long paragraphs that received a passing grade.

Really? I wrote five paragraphs just to be safe.

Here are some more examples of essay topics. I found these in my clep study guides:
1) Some people believe that too many high school students receive diplomas without having mastered basic skills in reading, math, and social sciences. Some states have already adopted a policy by which a student must pass a standardized test in these areas in order to be graduated from his class.
Write an essay in which you support or refute the proposition that all 12th graders should be required to pass a standardized exam on basic skills before they are given a diploma. Be sure to give reasons for your opinion and to support those reasons with specific examples from your reading or experience.
2) The old saying, "Experience is the best teacher," suggests to some people that they would benefit more from learning on the job or in the world than from continuing their formal education in the school or college classroom.
Write an essay in which you discuss the relative values of experiential and academic learning. Support your view with specific examples from literature, history, current events, or personal experience.

No, there is no spell check, but I don't think a few misspellings will have a big impact on your grade. The graders are looking more for content, rather than style, punctuation, or spelling.
