Hi! Long time lurker but I am finally going to get this degree business done. I have decided on a BALS with no concentration at TESU. Based on the initial evaluation I received it just seemed to give me the best flexibility in filling my GAPS. With the 15 CR UL requirement with at least two different concentrations, can someone recommend some UL options that I can take via SL, STUDY.com or even TEEX? If there are other avenues I am open to that as well.
My goal is to only have to take the capstones required at TESU and use other sources to complete the rest.
I really appreciate any help given.

How many RA (community college or university) credits do you have? I very strongly recommend the UL options at Olivet Nazarene University but especially so if you have fewer than 24 RA credits. $150 with NO up-front costs is amazing for RA credits that are self-paced. Especially UL RA credits!

TEEX's Death Investigation + any other courses from that list would be sufficient to meet the requirements of 2 or more concentrations.
Without knowing what you already have, it's hard to make further recommendations. However, I would strongly recommend that you make sure a BALS fits with your career plans and isn't just what looks easiest at first glance. Between Sophia, SDC, SL, Coopersmith, etc., there are a number of degrees that are pretty straightforward to obtain. If you really do want a Lib Studies degree, there is absolutely nothing wrong with that. But there are other options.

If you are able to identify a reasonable path, I am open to it. I spent a bit of time using the academic evaluation tool they have to see where my credits may fit. My goal is to be able to take whatever class possible outside TESU. I only want to take the cornerstone and capstone required. It is ver overwhelming.

Assuming those are all RA credits (and not from places like SDC or Sophia), you could easily get a BSBA of some description. You took Marketing, perhaps a BSBA Marketing degree? Or, really, any of the options on the roadmap here: https://degreeforum.miraheze.org/wiki/Sa...ts_Roadmap
Your credits are generic and few enough that they will fit into pretty much any degree plan there. The only issue is what YOU want to do. Again, if you actually WANT a BALS then that's not wrong. But you do have more options.
Instead of checking out the what-ifs on TESU, look at the degrees listed on the wiki and choose the one that is most attractive to you. That might be the BALS degree, it might not.

If I were you, I would also consider COSC and EC - both are cheaper than TESU.
COSC $3,183 for fees & tuition for Cornerstone & Capstone, it's up to you how you'd complete the remaining 66cr
EC $5,300 for fees & tuition for Info Lit, Cornerstone & Capstone, it's up to you how you'd complete the remaining 65cr
EC2 $5,850 for fees & tuition for Info Lit, Cornerstone, Capstone and 2 add'l courses, it's up to you how you'd complete the remaining 59cr
TESU $6,654 for fees & tuition for Cornerstone & Capstone, it's up to you how you'd complete the remaining 66cr

Yes all my credits are RA. I did look at the link you provided with various BA or BSBS concentrations and to be honest by biggest issue is trying to find a place I can meet all my ULs. I am more a Sophia or Study.com type of learner. That is why the BALS with no concentration works for me. For what I do this degree would be a needed piece of paper but it doesn’t really matter what my concentration of lack of is. I just need to be able to check a box. This missing piece with an additional certification and my current experience I know it will take me further in my career. So the quicker and easier the better...

COSC is MORE generous in some ways - they have a BSLS, which is a BS in Liberal Studies - and they allow 60cr of non-liberal arts courses, whereas TESU only allows a max of 27cr. So, for someone who may have credits that are considered "free electives", you may be better off at COSC.
How many nursing credits do you have?
- they will come in as Free Electives at TESU
- they will come in as non-liberal-arts at COSC, and you may combine them with some additional science credits and something like Psych, to create a concentration (COSC requires one, it can be 2-3 areas)
