Is the Guided Study version of the Capstone self-paced?

From what I know, the online version of the Capstone (LIB-495) has weekly writing assignments and discussion forum posts—you have to follow a defined schedule. 

I'm not too knowledgable about the Guided Study version, and haven't found any information on this, however, is it self-paced? In other words, since there are no discussion forums, do you just get the theory from your mentor, write the assignment, and then move on to the next assignment? Could you complete the assignments say every 3-4 days (instead of weekly like the online version)?

No, guided study is not self-paced. You just have to do extra writing assignments rather than discussion forums.

Either way, you can complete some of your work ahead of time, but you'll still need feedback from the mentor to continue on at some point, so it's not worth doing a lot.
