why for mathematics

and even though it says 15 credits of Mathematics Electives do they really mean "Electives" or do they want the standard

Calculus 2
Calculus 3
Linear Algebra
Ordinary Differential Equations
Discrete Math
and then 9 credits of Natural Science, Computer Science, or Math Electives

Since it is a Mathematics Area of Study they are requiring Calculus I which is 4 credits instead of 3. TESU does not offer any 2 credit math courses to make up the difference so you would graduate with 1 extra credit but only 27 are technically required. If you could find a 2 credit math course (e.g. Sophia's 2 credit "Foundation of Statistics" which TESU unfortunately does not accept) that they would accept in transfer then you could possibly graduate with exactly 27 credits in that section.

Since this is an associates degree any level 1xx or 2xx math course that TESU accepts should work for the 15 credits of Mathematics Electives. If they want specific courses they will list them. Remember this is just an associates degree.
These are all the 1xx level Math courses TESU offers and some can be done at Sophia;
MAT-1050 Applied Liberal Arts Mathematics ( Sophia Introduction to College Mathematics)
MAT-1150 Intermediate Algebra
MAT-1190 Quantitative Business Analysis
MAT-1210 College Algebra ( Sophia College Algebra)
MAT-1290 Precalculus ( Sophia Precalculus)
Someone else can answer if Statistics courses would fill in the math electives.

CSM Learn is not Sophia, but it is accepted as BUS-2010 Quantitative Skills Business.
Other options include CLEP College Math (comes in as MAT-1020 General Math), the various math and stat classes from Study.com, business stats from Saylor, stats courses that come from the SAS Coursera certificates, as well as any math above level 1000 (100+ at other schools). It's not very strict other than the GE and calculus. If you have done any upper level math, that will easily be accepted as well, but not required.

In addition to what was provided above... For those looking at 15 credits residency or more and have tuition assistance or reimbursement, you may want to investigate an Associates that requires an Associates capstone as part of the 15 credits. In fact, I would also look at another Bachelors as well, to max the transfer credit and ROI/Value, you can get a second Associates or Bachelors if you resourcefully plan those 15 credits.
Last but not least, again, for those with assistance or reimbursement, even those on the Pell Grant, you have up to 6 years to use up the grant for undergrad studies. There is the options for Bachelors to Masters and taking the Masters courses for the pricing of undergrad studies, you can do that with TESU as an example, take 4 grad classes each year, once you've max that out, then graduate with the Bachelors with your alternative credit.
What you do is, take the classes required for the Bachelors, use alternative & RA credits towards the degree and finish off the residency requirements at TESU. The graduate classes you take will go under the other classes field and not part of the Bachelors. You can then reuse these credits for another Masters degree elsewhere as transfer credit, the reason is - some schools won't let you use these grad credits that have been applied to a previous degree.

yeah, you can't compare schools, but you should certainly be able to compare degrees
you expect every biology degree to have the same courses
you expect every CS degree to have the same courses
you expect every math degree to have the same courses

Ya, you get the AS in Math for the bragging rights, not for the rigor of the degree.
Though nobody is stopping you from taking:

Calculus 3

So by all means, students can take those courses if they want and it go on their transcript.
