Just got a response back from Excelsior regarding whether or not a Capstone course is now required for ALL bachelor degrees. Here is the response:

As of July 1, 2010, there is a 3-credit upper level Capstone course requirement for a B.S. or B.A. in Liberal Studies degree (major or no major). There are three Capstone courses to choose from: LA498HU, LA498NS, and LA498SS. More information about these courses can be found by clicking on each course name. Please click on the link below.

I'm glad I graduated prior to this being required. After reading all 3 , if i had to take one of them I would do the Humanities capstone, it seems like it would be the most fun.
