Does anyone know of some "resume builders"? Easy stuff like CPR certificate, typing cert. 30wpm, volunteer work.

You could put in stuff like WPM, skills with MS Office, Excel, Powerpoint, etc.. I'd add any leadership courses taken as well.

during and interview if asked What is your degree in?" or "What experience did school provide you?"

"Well, I was able to achieve in 1 year what others achieved in 4 years. Furthermore, I saved 85% of the costs and achieved the same results. So this tells you I am:
resiliant
smart
goal seeker
results oriented
determined
work great on a deadline
can handle the pressure
willing to consider alternative ways to get the same results in less time and for less of the total cost, thereby saving you money and time loss
All in all...I get results! You need me, you want me!"

or

When asked to talk about the school experience, talk about the process. Comment on how you analyzed TESC/Excelsior/COSC degree requirements, had your prior credits and training evaluated, and then structured a plan to meet the remaining degree requirements. That, in and of itself, demonstrates that you possess personal qualities highly regarded by employers. (general analytical skills, ability to complete a project, ability to multi-task as well as focus, determination, etc.)

Anything that demonstrates your leadership skills is important. Add any experience you have had managing people - don't worry about getting creative. People are people.
