No, I thought that I would need to wait until the March session based on other commitments -- there are 18 courses between Sophia and SDC that I need, I have a lot of time now (>20h week) but am currently unsure if I can speed through as I would need to after the next 3 weeks. (Self-employed slow season but upcoming holidays + 2 kids + hubs + dog, the usual...)
Do you suggest that I wait until I'm done at least some? I read in multiple places to make sure I'm done with most of the classes before applying, as UMPI automatically enrolls you if you're accepted *and* it's potentially more difficult/annoying (need permission) to transfer after enrollment. Maybe I'm reading too much into it and there should be a couple of months lead time, in which case, maybe I can finish the 18 courses in 10 weeks (the January session starts in 11 weeks)...?
If you want to start in March then I would apply right after the January session begins. I would also check in with YourPace admissions and not the regular admissions on a regular basis so you don't hit any delays. Don't worry about talking to or emailing with the enrollment counselors. They're not helpful and are sales people.
You're not automatically enrolled at acceptance. You're enrolled when you sign up for classes. You do need permission to transfer in classes after you register for classes, but it's really easy. You just email your academic advisor and ask for permission. They have rarely denied it in the past.

When you say to "check in" with the admissions -- am I inquiring with them like, "Hi, I plan to apply to start for March. Do you anticipate any delays?" kinda thing?

Check in on your application with YourPace admissions to make sure that they have received all of your transcripts and that your application is being processed.
