With compounding inflation happening at increasing speeds those degrees don't look that good anymore. So unless one of those is something you love doing, I would only focus on what you love. If you are going to be underpaid at least you will enjoy the job.

There are always 'other' options in addition to getting the associates, it's great to have an associates as I tell people that's going to be the new 'high school diploma'. The best play for those who don't think they'll go for a bachelors anytime soon, is to add a few certificates and get more experience, to max the trifecta of certs, degree, experience that many people look for when hiring.

Medical
Construction / manufacturing / maintenance

Usually pay off.

Yeah, in addition to those, associates in business, computers, engineering would get people in the doors... I still think it's a good idea to get the trifecta though, more certs and experience into the mix of an associates or higher for the degree path.
