Careful, Penn Foster isn't regionally accredited, so there will be transfer barriers at most colleges.

TESC has several self paced (sort of) options, maybe someone else can chime in on those. I think they are called ePack or something? They essentially only have end dates, no due dates- just everything due by the end. That might work for you?
