From what I've seen (I've seen a bunch of EC evals), Foundations of Education is a A&S at EC, but all other education courses are AP.
All of the Ethics courses are considered Ethics/Humanities except SOCSCI 108: Ethics in the Social Sciences, which is Ethics/Social Sciences. Just depends on where you need credits.
Business Comm (and Org Comm, Managerial Comm) are all considered Humanities.
