I think UMPI will be the fastest, with the biggest opportunity to raise your GPA, but nothing is going to allow you to finish before fall. Even the Big 3 would take a while, with applying, enrolling, and then taking the cornerstone and capstones: 12 weeks minimum at TESU (and that's after you get to 100cr and most of your UL complete, and you don't have any of those yet), 16 weeks at EC (cornerstone & capstone can't be done in same 8week term).

For UMPI, you'd need to take:
American Government
Sociology or World Religions or Human & Cultural Geography
You also should look at your JST to see what you have, you may have enough credits that you just do the 2 courses above, and then maybe take just a couple more credits through Sophia or ICC, and you're ready to enroll.
