Carbs aren't the enemy, IMO, sugar is. Too much sugar can sometimes be inflammatory, which can exacerbate your body's stress response. The problem is that so many foods in the US are just loaded with sugar, even when they don't have to be. So, you cut out carbs and you automatically feel better, then you attribute that to the lack of carbs when it may just be the lack of simple sugars. Italians generally live long and healthy lives absolutely full of carbs, but very little added sugar!
I would say to try eating a baked potato as a snack. Plain, maybe with some Mrs. Dash or a small amount of butter. Potatoes are aren't a complete food, but they have more potassium than bananas and lots of essential amino acids. Amino acids make proteins and potassium is both super important and can be lacking in the average diet.
