UMPI does look like the best option, since you prefer writing essays over taking tests - they have a BLS with Education Studies degree. You need to take at least 30 credits (10 classes) at UMPI. You can transfer up to 90 credits into a degree for UMPI, but there is no overall limit in the number of transferred credits. Since you have an interest in languages (e.g. if you are already fluent in French), you could do the ACTFL exam, which can be worth quite a bit of credit. Or even easier, you can simply do French or Spanish at Sophia. Remember to do the science + lab for UMPI at Sophia (Human Biology + Human Biology Lab), as it is not recommended to take it at UMPI.

Thank you! That was all very helpful. I'll look into the Educational Studies component on study.com. I should have mentioned that one of the agencies I'll possibly be working with for my next job position requires both a B.A. and an A.A. in a related field. That seems a bit silly to me, but I don't want to limit my options if I can just grab the A.A. along the way.
Another concern I have is that I was a homeschool student several decades ago. I have no transcripts or formal diploma to prove I graduated. From what I've read, it sounds as though that shouldn't be an issue with Pierpont, but I'm concerned about applying with UMPI or any other university.
If you have plenty of Sophia credits, it shouldn't be a big deal that you were a homeschool graduate. You can create your own diploma, technically. You can also create your own transcripts if you have any kind of record of which "courses" you took and the grades you received.
