Daft question maybe, but do you already have Information Literacy or has that single credit course resulted in your current non-multiple-of-3 credit total?
If you list what you have, you could probably get some suggestions on which CLEP/DSST/etc are easier to fire through. If you're down to your last credit you probably already have an excellent idea about those
One option might be to do one of the International Computer Driving License (ICDL, known as ECDL in Europe) courses. These are 1 credit Applied Professional each up to a total of seven.
