Many UL Math courses are expensive compared to Study.com, etc.
I would suggest doing all of the classes for one major before you start on the other. In case policies change and you want to graduate sooner.

Yes. And psychology is more fun than a lot of the others.

Having psychology even basic knowledge is great not only for career potential but its very helpful for daily issues at work, home and so on.
To be honest i think psyc+ comsci, if done smart is more beneficial than math+ comsci. U can have just basic math knowledge and will be fine . If u have extensive knowledge in Psychology + comsci , its much more useful and more beneficial for ur career in the field
