Anyone ever get a "C" in the Capstone? Would it even matter?
I vote that it does not matter.
Only passing does!

It lowers your GPA, which only matters if you're applying to some Master's programs or an employer cares about it.

One of my favorite sayings from college was "C's earn degrees" when things got tough. Yes, they can lower your GPA, but they can also help you cross the finish line!

I will be very happy if I manage to get a C.
So far i'm finding the capstone quite difficult because i'm not a great writer.

I hear you! I am not a good writer either.
It is a lot of work. 4 Papers, 18 Discussions, and 18 reply's in my case. I have no grades back yet to gauge?

I chose to do the guided study because my work schedule is a pain and I have to travel around a lot. I didn't turn in the first assignment because of travel and the professor said it would be ok to turn in 2 assignments together. I then went ahead and completed the first three assignments and uploaded them. Just waiting for them to be graded now.
The assignments are actually chapters of the capstone, so at the end its just a case of putting them all together. I just had 10 days off and completed all of the capstone paper in one go. I asked the prof if it was ok to just hand it in completed, but the individual assignments are needed so he can make suggestions.

My 16 discussions/replies are on average 700 words (not 350 like they say). 11,200 words = 20% of Grade!
My 4 x 1250-1500 word 5-7 page papers are running 65% larger. 10,000 words = 80% of Grade

My posts were typically 2-4 paragraphs written in 10-20 min. The replies were usually one paragraph and took as long as writing a reply here.
