I was in the same boat; needed two courses for financial aid for my Social Sciences degree. I took Juvenile Delinquency (SOC-242) at the same time I was taking the capstone. It wasn't overly difficult, but then again I may have had a lot more free time outside of work than you will. I chose that particular course because it required a term paper at the end instead of a final exam. I knew it'd be a very busy term with the capstone and I felt (for me anyway) it would be less stressful to write a term paper than have to worry about cramming for an exam.
Edited to add: If you still need UL credits, Juvenile Delinquency may not be an option for you. But the point remains the same - take a look at the curriculum for the course and decide what would work best for you in a very busy time if you decide to take on another course while doing the capstone.

I would be the opposite. I would find writing a term paper to take up way too much time, but a final exam (especially if I've been reading the textbook all along) MUCH easier to manage. I took an 8 week course last summer, and besides reading the textbook, there was not a lot to do. I found that course to be extremely easy, as long as I managed to fit my reading in every week. With about 2 chapters a week, and taking notes, I got an easy A on each test and the final exam, without spending a lot of time on the course.
