Maybe TESU BA Biology in one to two semesters? Since you already have >24 credit hours after your first humanities degree, all you need is just the Capstone which is not difficult to get an A. The other Biology classes you can get it done using Sophia or Upper Iowa University's regionally-accredited self-paced courses ("$695/course. The self-paced courses are assignment-based, allowing students to manage their study schedule without time constraints. Assignments are open book and open internet, enabling students to access resources for completing their coursework effectively"):

BIO 100 General Biological Science
BIO 135 Principles of Biology I w/ Lab
BIO 140 Principles of Biology II w/ Lab
BIO 165 Human Biology & Nutrition
BIO 210 Microbiology w/ Lab
BIO 270 Human Anatomy & Physiology I w/ Lab
BIO 275 Human Anatomy & Physiology II w/ Lab

CHEM 151 General Chemistry I w/ Lab
CHEM 152 General Chemistry II w/ Lab

So now you would have a 4.0 GPA BA Biology degree transcript to show for your Cyprus Medical School admissions even though it's basically a one-course degree!

Many of the degrees have been completed in one or two terms by people transferring in 90 credits -- not just the Liberal Studies degree. However, the Health Administration degree (not Health Sciences) has an internship requirement, which on its own would likely make it impossible to complete the degree in one term and might make two terms difficult. It also has 64 credits total in the major--37 health administration credits and 27 community health credits--a lot of which do not have easily accessible ACE-recommended equivalents. That means you would likely need to take more than 30 credits at UMPI

TLDR - I haven't tried, but I doubt it could be completed in 1 term.
