I'm not sure whether any graduate admission test viewed in isolation predicts graduation.
The question is whether the admissions test improves the overall decision model. We took a close look at long-term GMAT data for my institution some years ago. The GMAT alone was not predictive of graduation. However we got better better results when combined with other factors (overall gpa, major gpa, written statement, etc.) relative to just using the other factors. For the stats minded, think F-statistic.,

So true! That any standardized exam is held up as a predictor of anything other than future standardized exam success is nonsense, but that's what they have- so that's what they use, and they've used it for so long that they believe it measures something.

According to this article, GPA, alone, is a better predictor than the physics subject test, alone. GPA is often reflective of perseverance, good work habits, and good study skills. There are a lot of people of average intelligence who have managed to get high GPAs due to their work ethic. On the other hand, there are a lot of people with high IQs who have bad grades due to lack of effort.

Grit is pretty much impossible to judge though. Totally subjective.

Well, Martin Seligman’s positive psychology is almost entirely based on grit. And he has identified some parameters for it. There is actually a 5-part positive psychology course being offered on coursera. One of my friends is currently taking that course, and she is all praise for it. I plan to take it at some stage.
